  • Peel the potatoes and cut them into thin, even strips about 1/4 inch thick. 
  • In a large bowl, add 4 cups of cold water with 1/4 cup of white vinegar.
  • Add the potato strips to the water-vinegar mixture and let them soak for at least 30 minutes. This helps remove excess starch, making the fries crispier.
  • After soaking, drain the potatoes and pat them completely dry with paper towels or a clean kitchen towel.
  • Pour enough canola oil into a deep, heavy-bottomed pot to fill it about 2 inches deep.
